What’s the Deal with Unwashed Eggs?
When a hen lays an egg, it’s naturally coated with a protective layer called the “bloom” (or cuticle). This invisible coating seals the shell’s tiny pores and prevents bacteria from getting inside, keeping the egg fresh longer without refrigeration.
In the U.S., commercial egg producers are required to wash and sanitize eggs, removing the bloom. Once washed, eggs must be refrigerated to prevent contamination. But when left unwashed, eggs can be safely stored at room temperature for weeks.
How We Store Our Eggs at Goldfinch Farm
We aim to match the conditions the eggs were laid in:
During cooler months (fall, winter, early spring) → We refrigerate eggs.
During warmer months (late spring, summer, early fall) → We store eggs at room temperature.
This approach follows the natural rhythm of the seasons and preserves freshness in the most practical way possible. Is it an official “best practice”? We’re not sure—but it makes sense to us, and our eggs stay fresh!
How Long Do Unwashed Eggs Last?
On the counter (room temp): About 2-3 weeks
In the fridge: Up to 3 months or more
If you’re planning to store eggs for longer than a couple of weeks, refrigeration is the safest bet.
Are Unwashed Eggs Safe?
Absolutely! In many parts of the world, including Europe, washing eggs is not standard practice. Instead, farms leave the bloom intact, and eggs are sold unrefrigerated. As long as they’re handled properly and stored in a clean environment, unwashed eggs are just as safe—if not safer—than washed eggs.
How Should I Wash an Egg If I Need To?
If an egg is visibly dirty, you can wipe it with a dry cloth or gently brush off debris. If washing is necessary:
Use warm running water (warmer than the egg).
Do NOT soak the egg—this can cause bacteria to enter through the shell.
Dry immediately and refrigerate afterward.
